Fermentation then occurs at temperatures between 22 - 25°, during which the skins are racked and returned to the liquid several times to extract flavour, structure and stability. The wine then undergoes malolactic fermentation, before being filtered and fined, and finally bottled. History: The Chianti region is in Tuscany. All wines from this region must be made with a minimum of 80% Sangiovese, to protect the region's identity and quality.
